This quick-and-easy black bean burger stuffed waffle is super healthy, gluten free, packed with vegetables, and can be easily made vegan.
It's a delicious option for a meatless (or vegan) savory stuffed waffle. The maple mustard sauce has a great blend of sweetness and piquancy.
Ingredients
Batter
- 1 ½ cups blanched almond flour
- ¼ cup tapioca starch
- 1 tbs baking powder
- ¼ tsp salt
- ⅓ cup unsweetened milk
- 3 eggs
- 3 tbsp cooking oil
Filling
- 3 oz black bean burger patty
- 1 slice tomato
- ¼ avocado, sliced
- 2 tbsp maple mustard sauce:
- mix 1 tbsp maple syrup with 1 tbsp spicy brown mustard
For vegan option, replace eggs by mixing 2 tbsp flaxseed meal with 6 tbsp water and sit for 5 minutes before adding to the batter.
Directions
Prepare the batter by whisking all the ingredients together in a medium-sized mixing bowl until smooth.
